Hanukkah Favorite Recipes
Even though I am not Jewish I still have enjoyed some great recipes that are often used in Hanukkah celebrations. My Grandma made potato latkes. These things are out of this world. Here is the recipe.
Potato Latkes:
2 lbs of Potatoes
2 Large Eggs
Salt to taste
3 tablespoons of vegatable oil (for frying)
Peel the potatoes and grate them. If you never used a mandolin this is the perfect time to try! When you grate the potatoes put the potatoes directly into a bowl of cold water. This will keep them from turning brown and wash away some of the starch. Transfer the potatoes to a colander and drain as much water out as possible (squeeze the water out if needed). Transfer the potatoes to a bowl add to eggs and salt to taste then toss. Heat oil in the pan to approximately 350 degrees and spoon mixture to make small pancakes. Press pancakes slightly and turn when golden brown. Serve and enjoy.
Roasted Chicken:
3 to 4lb chicken
3 tablespoons of vegetable oil
2 cloves of minced garlic
1 tablespoon of kosher salt
1 tablespoon of lemon juice
Mix oil, garlic and lemon juice . Spread oil mixture on chicken both in and out. Put chicken in oven and roast in 400 degree oven approximately 1 hour or until internal temperature reaches 170 degrees. Make sure juices run clear.
Sauteed Garlic Green Beans:
1 bag of frozen green beans. If using fresh make sure you cut ends off. I also like to blanch my fresh green beans before I saute them. I like frozen french cut myself.
1/2 tablespoons of Garlic powder
kosher salt to taste
white or black pepper to taste
2 tablespoon of diced pimentos
Saute green beans, pimentos and spices on frying pan using vegetable oil. Heat till beans are AL Dante! Enjoy
